i would have to say DN Angel. yeah yeah i know what everyone is going to say but it was funny and entertaining.
I tend to stick with what I've found funny or interesting in most cases, I'd recommend:
Ghost in the Shell: Stand Alone Complex
It's made me think about some concepts more than I would have, and for an action based anime that's something that engages me on a higher level.
Great Teacher Onizuka
Probably the anime I've found the funniest. It doesn't seem as over the top as the manga (or from the one volume I read at any rate) yet still provides much laughs with some interesting pop culture references scattered about.
Cowboy Bebop
A great story, a great cast and great animation make this anime...
...well... GREAT!
It's one of those animes you really have to see to understand but there's a great reason for it's large following.
Samurai Champloo
In a similar vein to Cowboy Bebop, yet lighter themed at times, I've also enjoyed this great series. It has some interesting use of anachronisms and great characters who are often amusing when put together.
Galaxy Angel
More laughs. Not as funny as some anime, but still often good for a chuckle or three. And some of the stories have been quite interesting too. I believe Galaxy Angel Z was my favourite series, but I can't be sure as my DVDs are packed away.

Ergo Proxy.
I can't stress enough just how underrated this is. It's this strange kind of steampunkish genre, but sent in a post-apocalyptic cybergothic world.
Totally gorgeous animation, a combination of cell animation and computer modelling with loads of great special effects. The dubbing's also amazing, which is rare to come accross.
It's very strange and a little eerie, and actually FOCUSES on creating a lack of human warmth in the series, especially for the first sixteen or so episodes, where other animes would be trying to build up their characters to create a decent fanbase.
Soundtrack's also great. Uses Monoral and Radiohead. Anyway. Watch it and stuff.

Because, along with intriguing and interesting story lines, they also are pretty deep, heartfelt, meaningful, and have great characters. The plots and story move along at a good pace, and stays good throughout the series. The animation is great, and parts of each of them (more Kanon and Air than Clannad) can actually make you tear up or cry. That, and they can find many spaces to include humor as well, while keeping it's seriousness.

I'll go ahead and recommend some of my favorites, but I think people have seen most of mine already.
Cowboy Bebop- A lot of people recommended this one already, and for good reason. It's a wonderful Anime, with a plot that can be both light-hearted and fun, or dark and dramatic.
Chrno Crusade- Not a typo, that's how it's spelled. Follows the story of Rosette Christopher and Chrono, and thier time together fighting demons for the Magdalene Order. And....
Spoiler: one of the only anime that I can think of where the villain ultimately wins
Peach Girl- High School romance type of Anime. Follows the story of Momo Adachi and her quest to be with the man of her dreams. Sounds like a typical love story, but it's Sae that really makes this a good one to watch. She's a manipulative character, and she makes for a good antagonist.
Fruit's Basket- Follows the story of Tohru Honda and the adventures she has while living with the Sohma family. The anime is short compared to the manga, so a lot of stuff had to be taken out, but it's still a good watch.
The Vision of Escaflowne- Follows the adventures of Hitomi Kanzaki, a girl with the ability to foresee future events. She has been transported from her world to the world of Gaia, which is in the middle of a war with the Zaibach empire. (note: although I do highly recommend the anime, I also recommend that you don't watch the movie adaptation of the show. It's awful...)
Outlaw Star- I haven't seen this one in a long time. I do remember seeing it on Cartoon Network when it was playing on that channel, and I loved it. Follows the adventure of Gene Starwind and his crew on the Outlaw Star. They have a lot of adventures, but basically thier ultimate destination is to get to the Galactic Leyline.

Since a lot of people took my ideas... I know this one is already on the thread, but Rosario+Vampire. In other words, into what I also recemend. This one is not popular, but here it is... Bludgeoning Angel: Dokuro-Chan. Its very funny, very perverted, and bad things always happen, sometimes it makes no sense but hey, its very very funny.
I posted eariler ^^^^^^^^^ Rosario+Vampire because its very awesome, there are a lot of cute/hot chicks in it, very perverted...(Lots of nosebleeds!!!), is very random at times... (There is a stalker chick who comes in randomly and just freaks everyone out...You never know when she will pop up and what will happen...)
I think these two anime's are very very worth watching even though there are only 13 episodes in Bludgeoning Angel and 26 episodes in Rosario+Vampire, they are still good anime's and worth a watch, plus if new episodes ever do come out, you dont need to watch 200-300 episodes just to get caught up to speed on whats happening.
Edit 1: I have just recently seen all 26 episodes of Claymore, and I think it's a great anime because it is not what you expect and has a great layered story with multiple twists and has all types of characters to keep the story going.

I would recommend Death Note anyday. Really is the best anime I have ever watched. Amazing and complex story.
Also:
Lucky Star: Never much of a story, but it's a fun anime to watch. Mostly for Konata, she is awesome.
Bleach: Obvious, because everyone watches it. But it is really good. Love most of the characters, they are the highlight of the anime.
The Melancholy Of Haruhi Suzumiya: I really love it because of the characters again. But also it is fun to watch, and even has different orders to watch the episodes in to get more out of the story.
Kuroshituji- Also known as Black Butler (translation). I thought it was a very good story, many intriguing characters and an interesting take on the afterlife. Fairly ye be warned, there be many a yaoi joke awaiting. Only negative thing if you ask me since it interrupts some of the serious parts of the storyline.
Angel Beats-Another afterlife based one. This one kept me on my toes with cliff hangers, a truly touching story, and by far one of the best endings ever. You just have to stick around and watch after the credits
