For me it would probably be going through Barretts past in the prison. I know its important but its kinda something I just try to rush through. There are few parts I dont enjoy playing in ff7, There are many in the other series (especially IX) that I dont enjoy playing through.
Another thing, waiting for Chocobos to mature. Sometimes it takes forever.
I don't mind Cloud's flashbacks either. What I don't like is the whole part from when you first meet Aeris, to when Cloud dresses up as a girl to get into Don Corneo's room. Also, going around in circles in the Great Glacier was highly annoying, and made me stop playing for months when I first went through the game.
One thing I'm surprised nobody has mentioned is Supernova. It was entertaining at first, but Sephiroth must have used it three times when I fought him and it just did my head in. More annoying was the fact is was just gravity magic; you had to sit through it and it couldn't even kill you.

There are two points in the game where I'll need to level up for a few hours...when you reach fort condor and aquire Yuffie (low level enemies around this area) and reaching Mideel (again, weak enemies but the best you can find for what is available at that point in the game, those green guys and tan-color slugs)
Temple of the Ancients also
Kalm and Lifestream sequences,definately.
Levelling up past 50 was bored-to-tears rated stuff.
Heh,heh, just remembered....the Sources items.....it's possible to attain perfect stats in VII,but you have to steal each Source one at a time from specific enemies scattered throughout different areas in the game.....didn't even try it.
