I don't find RPGs hard because I'm the idiot who grinds like a mad woman early on... only to find a better grinding spot a little further on. I'm usually over-levelled by the time I hit any bosses, which I think is a good thing.
My problem with RPGs isn't so much to do with the time I spend playing them or time I don't have, but the time and energy to play a lengthy story which can take a while to go somewhere. Latest example for me is Dragon Age, which I've just got back to after nine months of abandonment. I'm really loving the story so far (again), but I just can't be bothered with the lengthy conversations or running around for a hour or so in one dungeon to make sure I have everything. Then there's reading the codex, checking for side missions, and gah - I get bored eventually. There's no grinding spots either, so running back through an empty dungeon is pretty boring.
I find it hard to beat them because I give up after a while. Only RPG I've never given up on is FFVII - never gets boring for me because the story just seems to keep rolling, and dungeons aren't HUGE (except for the Temple of the Ancients, which isn't long, just a little dull. Oh, and the Crater before you beat up Sephiroth).
