Wooh, this is a grand scope of things to pick from wow. If it had to be just one thing though, I really love the job system, still love their games without it, but I wish they'd bring it back like the good ol' days.
Although I am right there with ur feeling on the world maps, loved em.
My fav has got to be the optional superbosses like Yiazmat from FF12 and ruby weapon from FF7.
It gave you a really exciting challenge. Something most final story bosses didn't have.

I really like side quests, and I don't mean, just collect a bunch of stuff quests, or jumping rope 1000 f'ing times quests, but ones that are really detailed and required some story elements and follow up.
Like the alien encounter quest from 8 or the lake quest from the same game
chocobo raising and racing from 7 was really complex, especially going to buy the right greens and then traveling the world to find the secret materia afterwards, not to mention the gold saucer
even little ones like the letters you carried between the man & woman from ff 6 really opened up that world a lot.
But as stated, jumping rope & lightening bolts,,,,,,,, PASS!
Pretty much all of them honestly, I liked it in tactics alot, heck I liked the system in all 3 of them a lot, don't think I really weigh one above the other.
