I liked Hunt for the Red October... I don't know about Sean being Russian...but it was all very epic. Sam Neil played a fantastic role. And I didn't like the guy that played Ryan.
The Sum of All Fears was excellent as well... Very shocking, albeit.
I've only seen parts of Patriot Games, which is unfair. I thought Harrison was best as Ryan and I haven't watched his movies.
My favorite will always be Hunt for the Red October, though.

Yeah. I thought the scene was kinda funny where they're speeking Russian, it closes in on the guy's mouth, and all of a sudden they're speeking English with their normal accents. Connery with his particularly thick Scottish accent kinda threw me off. Although I suppose having them speak Russian the entire movie would've taken quite a bit of effort, and they probably figured people wouldn't want to read subtitles all the way through...
