I'm a man of simple tastes. I cooked myself some grilled cheese for lunch.

No desserts or anything, because generally desserts consist of pie, cake, or ice cream, and those are the unhealthy type of fatty. Desserts are packed full of sugar. Too much sugar leads to weight gain, which is directly correlated to the development of type 2 diabetes. YOLO, right? Therefore, watch what you eat when you're young, and you'll be healthy when you're old.
^ Lol. I'm not big on sweets really. I'll eat my mom's fudge, but the only sugar that's in it is what's in the chocolate chips- she adapted her recipe for my dad after he was diagnosed with Type 2 Diabetes. There's no added sugar or marshmallow cream in it.

Take out pretty much everything but the eggplant (which I roasted with garlic and onion). And add fried taters & queso fresco. With homemade corn tortillas and really spicy salsa verde. and had spicy black beans with it.
Can't explain how amazing it tasted, especially the smoked paprika hummus! - Kale, sauerkraut, cherry tomatoes, cucumber and sundried tomatoes.
