Cheese Cake, and the best kind is most definitely New York style cheese cake. One of the most delicious things in the entire f*cking world...
I like cheese cake. I'm not all too keen on the fruity ones, but I still like them. I prefer the chocolate ones.
Then there is banoffee pie/sponge. I prefer the sponge if I'm honest, drizzled with toffee and with sliced banana and a few small scoops of vanilla ice-cream.
I also like pancakes with syrup and vanilla ice-cream.
I think my all time favourite are profiteroles. They're ice-cream filled buns, drizzled with melted chocolate. It's perfect when the chocolate is warm... <3

This might be easier to name all the desserts that I don't like. That list is far shorter.
Anyway, I suppose my absolute favorites are strawberry refridgerator cake, pound cake, caramel cake, nearly any kind of ice cream, better than sex cake (a.k.a. four layer delight, but it's more fun to call it better than sex cake), volcano cake and raspberry cheesecake.
Cookies (the chewy kind) are high on the list as well, but I don't really consider those a dessert. They're just a sweet snack sometimes.
If I only had to pick one from that list, I'd go with the strawberry refridgerator cake. It's really easy to make too. It's just a white cake that has a few holes poked throughout, and you pour in a mixture of strawberry jello and strawberry soda. Allow that to chill in the refridgerator for a while until the mixture congeals a bit, and then when it's firm enough, you can top with icing. The kind I use is french vanilla pudding mix and whipped cream mixed together.

Frozen yougurt is delicious, too. In my country there's taro flavor, my favourite one. I always add oreo, mochi, and strawberries as toppings.

I'm assuming you don't let the jello solidify, but put it in when it's still liquid, yes? I'll have to try that.
