My favorite cheese to eat as... cheese, would be codswald.

It's a sharp English cheddar with chives, and it's fkin amazing.

My favorite creamy type cheese would be boursin, a french spreadable cheese with garlic, chives, and other herbs. Goes great on eggs, or beaten with cream cheese on a toasted bagel, or piped on poached vegetables, ect.

My favorite for pastas would be a nice hard aged freshly grated asiago.

For sandwhiches, like cold roast beef, or turkey, would be cheddar, followed by swiss.

For pizzas, provel, cooked in a hot oven so it browns and "caramelizes"

For burgers and grilled cheese... good old fashioned American.
