Probably because there were a ridiculous amount of solders there that could have easily blown his brains out at once. It wasn't just one or two it was the whole damn Bevelle army.

Characters can only really die in a cutscene like the one you mentioned. He could have been shot numerous times while fighting off all the Bevelle guards and not sustained any permanent damage because being KO'd in battle is different to being killed or shot outside of a battle, in videogames anyway. And besides, Kinoc (the old guy) had the gun pointed at his face so any resistance by Tidus would have probably resulted in a direct headshot.

To turn it around, would you have attacked an "old guy" that is pointing a gun straight in your face?
Besides, that old guy was only one of extremly many guards and machinas.
because you can get shot a million times in a battle and not die, but one bullet in a cutscene will kill ya
What about the theory that Tidus's mother taught him to respect his elders(regardless of the fact that Tidus hates his father)
I mean when someone points a gun at my head I would stop to. But hey I only look at things rationally.
All FF games are the same you overcome mind numbing odds and end up being held at bay by something really pathetic to what you have just overcome. Also Aeris's death in FF7 is a prime example of this.
