From what I understand, it's supposedly sake. Whatever it is, it has to be alcoholic, because it's flammable (see: Tornado Overdrive).

I'm not 100% sure I understand the question; there are a couple possible answers. First of all, you would miss out on any dialogue and stat bonuses granted by talking to him with your characters; secondly, if you attack Seymour before killing off his Guado guardians, they will continually heal him.

Regarding post #8/9, the airship does have a name, just not given in the game itself. The official name of it is the Continental Circus.

I know isn't that weird? We have different FFX's cause my Tidus says nothing for hastega lol.

You also encounter him, On the Milhen Lowroad ( South ) ( if you lose to the chocobo eater you end up on the lowroad and O'aka is there down the road, or at the end of the Newroad circle back near the entrance to Mushroom rock road. And you find him at the Mushroom Rock Command Center, The Moonflow ( North ), Guadosalem.

Lady Ginnum? Or was it Father Zuke. Lulu was a guardian to Ginnum and Wakka and Lulu was both guardians to Father Zuke.
