Garnet for me. Don't really have a specific reason. She's just a likeable character, albeit a bit naive.

Anyways, I don't really like any of these three girls. I mainly use Eiko and Freya because they are useful, not because I like it.... I guess I prefer Freya over the other two.

However, if we could add the NPCs, Mikoto is pretty sweet. Shame that you only see her VERY late in the game.
