My friend and I have theorized that, that is Adel's "true form". Much like how the final transformation of Ultimecia (her humanly head/torso dangling upside down a legs to the beastly, no face body). Our theory could explain how she is still a sorceress yet looks like one beastly man.

Sorceress Adel is a shemale. Easy to see. The powers she received probably acted like a huge shot of adrenaline/testosterone overdose and she suddenly got pecs and masculinized. It's like those female body builders who take drugs to get bigger and they lose any remnants of boobs.
Adel is female. The clue is in the word 'sorceress'. As already pointed out, only females can received Hyne's powers.
The way she looks is just that. It's not determining what gender she is. It's reflective on her personality and magic preference.
She probably looks completely different in her true form. Like Edea does.

Adel is a woman. Her gender was (and still is) a source of confusion due to her appearance, but she's a woman. Her torso is actually covered by armor, it's confusing because it looks no different from the rest of her, but she is wearing a chest plate. First time I played through, I was confused because everyone called her sorceress yet she looked like a guy. Anywho, the topic was addressed in the Ultimania guide.
