It's totally viable to get away from that in FF1. If youre looking for a no straight up brawn game, then I recommend playing Thief/Red Mage/Black Mage/White Mage. You'll have to do some babysitting and the game will actually be quite challenging, since you will be gimped into relying on magic most of the lategame. Should be a fun time though, I've never tried that combo myself but I think it'd be fun.

I usually go with the default party, in other words Knight, Thief, White Mage, and Black Mage. It works fine for me, Final Fantasy I is already easy as it is, no need for anything better.
I just started a party consisting of Thief, Red Mage, Monk, and White Mage. I do not know how strong this party is. I have always played the Warrior, Thief, Black Mage, and White Mage.
Excluding fighters, i think one of the best parties would be:
x2 Black Mages
x1 White Mage
x1 Thief/Red Mage <- depends on whether Thief classifies as a fighter archetype in your eyes.
Benefits:
- total ownage in the magical department and black mages just look awesome =D
- have a good healer to support your team
- if Thief/Red Mage is placed as leader, it lessens the chance of the other party members getting hit since party leader always has the highest chance of being hit
- mages are awesome
Cons:
- Red Mage isn't as defensively strong as Warriors
- squishy team with low hp
- not useful against magic-resistant enemies
