I just don't really see why an emulator would have worse (or better for that matter) visuals than the real deal. Sound, I can understand, performance, I can certainly understand, but I don't see why the visuals would be different. Who knows though, perhaps you're correct.
Authenticity for one. To some people nothing beats the real thing, even if they have to hunt the real thing down when it's obsolete and getting rarer.

But I have noticed regardless of display device/cables I've gotten unusual blurring (possibly caused by upscaling) and in some cases lines or other artifacts that simply aren't there when I'm playing the same game on the console it was intended for (PS2 mainly, a few PSX games are also noticeably effected, many in terms of that blur). Metal Gear Solid looks total arse on any PS3, especially on a true HD TV/Monitor.
