After quiting WoW I've had the urge to go back and sink my teeth into a quality new RPG preferably for PS3 (Though I have a PSP too) but haven't really seen anything stand out. The only RPG I have at the moment is Eternal Sonata about some loli but I'm looking more for something along the lines of the PS FF games. Any help will be appreciated.

I have played Eternal Sonata but -for me- it's not the best JRPG's out there for the PS3.
I would recommend Star Ocean: the last hope International, as TerraWham mentioned, it's really good.
And I would also suggest Final Fantasy XIII. I'm sure you've heard much bad things about it, but it's a really good, high-quality game.

The Elder Scrolls IV: Oblivion! This is a Western RPG though ... But it's a MUST for the RPG lover
It may not be the best, but it's a good one. And Angantyr asked for good JRPGS.
So I recomment playing Eternal Sonata. It's a bit crazy by times, you mostly think you're playing a dream sequence of someone who's doing drugs all day long, but the story isn't that bad and I really like the gameplay. <3 The only thing I skipped each time was the information about Chopin. Didn't like that as much as the plot in the dreams.
Oh and Star Ocean really IS good. ^^

These are all of the RPGs made by Japanese developers. Since I believe that good is more in the eye of the beholder, I'll give you a short brief on each one and let you decide which suits your tastes.
3D Dot Game Heroes - A parody RPG of Zelda and 8/16 Bit games.
Ar Tonelico Qoga - The last in the Ar Tonelico series, rated M for a reason, has a lot of sexual innuendos, but will probably surprise you for having a series and deep story that can sometimes be rather dark.
Atelier Rorona - A simple RPG about crafting items and more slice of life experiences than saving the world. If you enjoy crafting then this is a good game for you.
Cross Edge - A crossover RPG of Darkstalkers, Disgaea, Ar Tonelico, Atelier and a couple of other games you've never heard of. Combats is unique and fun, the story is pretty simple.
Demon's Souls - A deep and challenging RPG styled after European Middle Ages, it'll punish you and kill you a ton, but it'll always be your fault and not because the game is being cheap. A highly recommended game for anyone that doesn't mind a good challenge.
Disgaea 3 - The same game as the last two Tactic RPGs in Disgaea. A lot of quirky characters and a whacky story. If you want a crazy deep leveling and combat along with a zany story this is it.
Enchanted Arms - This one is a little weird and a port from the 360. It's got some interesting combat ideas and some very Japanese ideas.
Eternal Sonata - Already spoken about, but if you enjoy real time combat like Star Ocean or the Tales game this is a lot of fun and you play with two others in local co-op. The story is definitely a case of love or hate it.
FFXIII - Not much needs to be said, you'll play it or not based on your own thoughts anyway.
Hyperdimension Neptunia - A slight crossover, but more parody of the entire game industry, but probably not executed in the best fashion. If you're wanting an intelligent parody, this is not it, but you want something light hearted, silly, fun and plenty of jokes and references only gamers will get then it is fun. Combat is a bit different and customizable.
Last Rebellion - This is apparently an old PSP game that got moved over, so it has a lot of things against it, but the combat is different and interesting. The characters are standout enough to make you curious.
Record of Agarest War - This is a strange one, it is a Tactic RPG, but one of the points of the game is meet the girls in your party and form a relationship with them such that you'll have to choose one of them to marry. After the wedding you have a kid and then when the kid grows up you play your kid. The game takes place over 5 generations of this always playing your kid of the parents you knew before. A different girl and stats will end up affected the type of kid you play in the next generation.
Record of Agarest War Zero - More of the same, just more girls and less generations.
Resonance of Fate - Light on the story, it probably confuse you, but the combat is really fun and fast paced. It has a interesting combination of tactics and real time combat. Plus it has guns, no magic.
Star Ocean 4 - The 4th in the Star Ocean series, it is a sci-fi RPG that is a prequel to the others. A fun real time combat system and a lot of very Japanese things tossed in. There is a lot of stuff in the game to keep you busy for a long time.
Trinity: Soul of Zill O'll - Imagine taking Dynasty Warriors and merging it with a RPG and that's pretty much what you got. It seems rather bland, but it's got some interesting points.
Trinity Universe - A slight crossover of Atelier and Disgaea with a largely original cast. The combat is fun, the story is light hearted and silly, but it has some addictive qualities to it.
Valkyria Chronicles - A highly recommended game that's become a Cult Classic pretty much, it is a Tactics, Strategy RPG set during an alternate universe World War. Combat is deep and engaging, the art style is breathtaking and it is a good war story.
White Knight Chronicles - Another RPG from Level 5, the guys behind DQVIII and DQIX, among others. The story is light, but it is a lite MMO, with all of the trappings of a MMO without the subscription and large interactions. Most of the game is about the online questing and gathering. If you like Monster Hunter then you'll like this game.
Disgaea 4, White Knight Chronicles 2, Atelier Totori and Dark Souls are all coming out in September or early October. Which is all sequels or successors to previously listed games above. So there is a long list of JRPGs to pick from.
