What about the Adventure and 3 legend games? I know they weren't called Final Fantasy in Japan, they just slapped Final Fantasy on here to get it to sell better. (It worked in my case)
Anywho I really enjoyed these games. Even more so for Adventure. That game was so epic.
I played them, but don't remember the stories at all. I do remember having a lot of fun with them, but also getting incredibly frustrated in one of the dungeons and saying **** it. That was really the extent of it. I was always more of a fan of Link's Awakening, which is probably my all time favorite true gameboy game.
Otherwise, my favorites would be the ports of the snes Mario games.

I didn't play "FF" adventure, although I played its remake, "Sword of Mana"... It was good, but wasn't gripping like the other final fantasies of the time. (I'm comaparing it as it would have been when it first came out, but still did not stand out as the remake)
... By the time FF adventure came out I was an avid pokemon nerd (...still am...) and was continuously playing through my red, blue and yellow versions (thats right, I had all of them ) so I wasn't too open to other games. But I did have a chance to play more rpgs around the time of the first playstation rpgs. Most of which I enjoyed.
Never played any of the Legend games, though I want to (wish S-E would release Saga 2 for the DS in the states), but I did beat Final Fantasy Adventure which I really had fun playing. There was this one area that I was able to power level easily; three or four "wolf" enemies would be lined up and I would use a whip or whatever weapon allowed for far reach. I haven't played the game in a long time so I'm not sure on the weapon, but I would kill them in one attack, leave the screen, go back up and attack them again. I really liked Boco in FF:A with the upgrades he got, one of the coolest chocobos though he doesn't have much competition since there aren't many special chocobos.
When i tried to play Legend 1-3 i soon gave up cause it was 15 yrs old or something in black and white. That and adventure somehow passed me by when i always played GB when i was younger.
I played Sword of Mana though and liked it once.
The FFL games were fun to play back in the day. The first one was kinda cool and had that D&D feel to it while you were playing. It had some pretty good plot twists too for a gameboy rpg, and the difficulty was at a good pace, not too tough but not too easy either. You could also choose what kind of party you had, so you could make the game at your pace.
The second one was really fun too. It had an even better storyline than the first, and I liked the addition of guest characters that could help you out in various parts of the story. The game started out a lot more user-friendly, but by the end it was ballzdeep tough, like even a single random battle could be a game over. The thing that made it tough was the RNG in the game made everything, from the chance of your stats going up after battle to the amount of enemies you fight, completely random. One battle you could fight 1 enemy, the next one it could be almost 30.
The third one went in a completely different option and was the easiest of all the games. I didn't care for it as much, it was just kind of a basic rpg game that had "Final Fantasy" attached to it.
But yeah I'm a big fan of the SaGa series so I enjoyed these games.

I never really played any of the FF games for GameBoy. The main purpose of my GameBoy was to play Pokemon Games.
I have heard good things about the FFL games from a bunch of my buddies. I may need to check em out. One of my friends keeps all his old games and shit so i'm sure he still has it.

I liked the games, but I have fonder memories of Pokemon Blue version, LoZ games, Donkey Kong Land and the Mario games (and Wario Land by extension). Great games, don't get me wrong, but I found platformers seemed to make the time go by faster and LoZ/pokemon kept me covered for my other gaming needs.
