Very interesting. I always wondered how this worked, and I think we had a thread about it not too long ago.
This is a little guide that explain how(and when) Yojimbo will use Zanmato.
It depends by many factors,but one the most important is the affinity.
When you get Yojimbo,this parameter will start at 50 points. The minimum is 0,the maximum 255. The parameter:
-decrease of 20 points if you pay it 0 guil.
-decrease of 10 points if Yojimbo died during the battle.
-decrease of 3 points if you make him return after you summoned it.
-decrease of 1 point if he uses Daigorou
-doesn't change when he uses Kozuka
-increase of 1 point when he uses Wakizashi on one enemy
-increase of 3 points when he uses Wakizashi on all enemies
-increase of 4 points when he uses Zanmato.
More hight is the affinity,the more times Yojimbo will use Zanmato. Unfortunately,you can't see this parameter in the game,but if Yojimbo uses Wakizashi (or,more better,when he uses Zanmato!) without being paid,that means that the affinity has reached the maximum.

I've also noticed a bit of a way when he MIGHT use it, although I'm not exactly sure. It only happened a total of three times in all five of my playthroughs. As far as I coud tell, when he nods his head after getting paid, I believe he will use Zanmato, although, again, I'm not entirely sure.

Ahaaa it makes a little more sense now actually.
Maybe I should start an own thread for this, but I'll take it here anyway to save space. Yojimbo sometimes automatically uses Wakizashi and Kozuka. Now I know why and how I guess. But that's usually in the middle of battles. He never does it immediately when summoned. Ever.
Except. In Dark Aeon fights. It pisses me off so badly. I'm having a really hard time with Dark Aeons, and even though I've been playing FFX for years back, I haven't been able to beat even one. (I've been refusing guides, maybe I should reconsider that by now..) I haven't even been able to beat Dark Valefor, and I assume she's supposed to be the easiest? My friend told me to just use Yojimbo's Zanmato on her, that's what she did. Well here's something funny. First thing I do, is I summon Yojimbo to the fight. Ready to pay him all those gil with his full overdrive meter to make him use Zanmato! Works every time in normal battle.
But here is when it gets funny. Immediately after he's been called forth, he uses one of his attacks randomly on Valefor. (And it ain't Zanmato.) Either Kozuka or Wakizashi. So, after that little moment of lost control, the turn goes over to Dark Valefor, and she finishes him off. And after him the rest of my party. WONDERFUL Yojimbo, how you must hate me. Sorry I should maybe take this to a thread of it's own, but I was wondering if you (or anyone else) perhaps knew the secret of this as well? I've tried this seriously 10 times + now, and it's not been a single time that this didn't happen. And it's only in this battle that it does. (Haven't tried with any other Dark Aeons, maybe I should and see what happens then.)

Cool now the dark yojimbo is going down but does the chances go up if i:
pay him alot of money
make him have full overdrive
and use grand summon?
Money was easy to come buy, so I just lobbed 175,000 Gil at him every time and he almost always responded with a Zanmato attack. Sliced his way through Dark Bahamut/Valefor/Yojimbo/Magus Sisters for me.
I always saved before-hand, so even if he didn't use it; I just reloaded. Easy.
I heard about his affinity from my cousin, like you said it is not viewable. When I was a noob I payed Yojimbo lots of gil and he eventually used zanmato to beat Nemesis after collecting the required monsters in calm lands. I eventually found that out on another FF site when it was explained.
