Lately, I've been on a yogurt kick. Kefir, in particular. I've been slicing up 4-5 strawberries, putting some Ezekiel sprouted grain cereal on top (maybe 1/2 cup), and pouring almost 1/4 cup of vanilla kefir on top. It makes my tummy feel really content without feeling stretched out.
Before that, I made a Koldskal recipe with an egg, greek yogurt, kefir, lemon... and then pouring that blended mixture over berries.
My favorite thing I did before that was overnight oatmeal (put 2/3 cup of oats in a container with 1 cup almond milk and 1 tbsp chia seeds, let sit over night) with a strawberry-rhubarb compote (made it with strawberries, rhubarb, and some cinnamon and cardamom). It was the tastiest thing, completely comforting and filling, and I could just close my container and take it to work with me if I needed to.
I have an avocado remoulade (avocados, green onion, lime juice, Dijon mustard, parsley, coconut oil) that I made for cod filets the other night that I'd really like to eat more of... if it's still good, I'm thinking I might boil a couple of eggs, cut them in half, and dump some remoulade on top. Maybe blend some frozen raspberries with some kefir and almond milk and drink that on the side.
