Classes should involve;
combat training
geography (an absolute definite considering how the party travelled)
Attack/Support magic classes
GF/Junctioning classes
SEED classes (for those training to become)
Arts (music, dance, drama etc)
Monster classes (recognition of the worlds beasts and how to deal with them).
Thats as much as I can think of now.
History (Local and Global)
Leadership
Ballroom dancing (as already stated)
Weapon/Weapon Repair
Physical Activity (something along the lines of what is seen at G Garden .Kind of weight training is you will)
Conflict Resolution
I'm kind of getting rather technical here, but this is something I would probably see in an average military based institute.

Everyone pretty much hit on all that I'd expect to see. Maybe something along the lines of an Psychological class on how to cope with disaster and intense situations. Also some sort of physical fitness class to keep everyone in the best shape possible.

How long are you at Garden? I imagine that you change classes year to year. I imagine younger students are given more classroom oriented experiences. You'll learn your history, your etiquette, your math, etc., etc. I think it's the older students, the ones we see that develop their own battle practices. In your final year, you are probably already hardened from extensive training in battle simulations and it's time to go out into the local area and find some ways to implement what you have learned. That's where we start the game, ya? And of course, different Gardens have a different approach. Irvine and Selphie definitely got different experiences than our starting cast.
I think you're at the Garden from the time of five or seven to eighteen or nineteen. I can't remember when they said Squall and Seifer went to Garden.
