Games beaten:- Crisis core, FF7 FF9 FF10. I need more time to game
Hunting involves several things, such as getting all the stellazios, finishing the chocobo hot and cold game, opening all treasure chests as well as other things. The highest rank possible is Rank S and I'm not sure of all the things you have to do but I'm pretty sure you need the Excalibur 2 so you gotta make it to Memoria fast.

Nope I got S without Excalibur II, but the funny thing is you don't really need all the Chocobo side quest complete either. The last play through I did, I payed attention to all my treasures because I wanted to see at what point I would achieve S rank. You need most of the tasks complete. I had the Ocean Chocograph left when I finished collecting all the Stellazzio coins. After getting all the Stellazzio coins was when I received S rank. I'm assuming I got all the chest prior, but I don't remember what disk I was on when I revived it.
You also need to find all the field items; those are the ones you discover with the "!" icon.
Gypsy is correct. I looked up some FAQ's about the Hunter Rankings and I found that you don't need to get the Excalibur II in order to get to rank S. Here is an excerpt from one of the more helpful guides on how to obtain a Rank S Hunter Badge:

Upon reaching Rank S, the man will get startled and run away. Follow him back
to the town entrance to learn that he's not really famous and is a low-rank
hunter (D, to be precise). He really just wants to be stronger so he's not
pushed around and called "four-arms." Before he splits, he gives Zidane the
key item [RANK S MEDAL]! He also divulges his real name, which no mortal has
ever heard before or again...
(NOTE: If you follow this guide, you should be able to get the medal upon
first reaching Daguerreo!)

It's no problem to get the S rank, do part of the chocobo-quest and find everything on the way and you get it early on disc 3.
S is the highest and you don't need Excalibur 2 to get it you just have to pick up as much treasure as possible (if you use the official guide you will piss getting an S rank) if you visit Daugerro you can meet the four armed man from Treno there and he will tell you your hunters rank and if you have reached S rank there is some extra dialouge that is quite amusing.
