Bleach has a couple that I really enjoy. The season two opening by Uverworld, but I can't remember the name of the song. It was half about the animation and half about the song itself. But the whole thing really got me psyched up for the new episode of Bleach.
Also Season one ending one, for Bleach Life is like a Boat is a really good song. I think it came down a little about the imagery which was Rukia just very solemnly standing there in combination with the music.
Season two ending one (3rd ending total) Houki Boshi is one of my all time favorite songs period. It was really cool how they show off all of the squads one ending at a time, but also the song is really nice to listen to. I listened to it over 3000 times on my Windows Media Player before my laptop got reset. Just to give you an idea of how many times I've listen to it.
Most of the rest of Bleach's openings and endings have been pretty forgettable, I enjoy them yes, but the imagery itself is far better than the songs could hope to match. Though I will admit that Shojo S by Scandal has grown on me.
Every single Inuyasha song was perfect. I have all of the songs on my laptop that I listen to regularly. Sadly, since AS never showed the OPs past the first season I've never really seen the openings. So I only got to know the EDs and the songs. But I love all of the songs, Angelus, Every Heart, Brand New World, Itazurana Kiss, Fukai Mori, My Will, Every Little Thing, I am, Change the World, Come, Oawrinai Yume, One Day One Dream.
Outlaw Star's opening and ending I always watch whenever I watch the series. It remains the only series that I will always watch both OP and ED every single time. I love the song and animation, but the ED even more. I love the artwork that is in both EDs. The music that goes along with it is amazing too. Half of the reason that I watch the ED is simply because the artwork is so beautiful to behold. Though with how much I've watched it I've started singing along with it.
Fullmetal Alchemist fourth opening Rewrite by Asian Kung Fu Generation is always great to watch. You get to see a lot of the characters doing some crazy stuff that never happens in the series, but simply looks awesome as a battle.
Sakura Wars TV, the opening is really good, but the theme song that is the Sakura Wars theme song is so great to listen to. They use it for almost all of their games and anime I think. The style of song is so different and powerful that is such a thrill to listen to.
Gundam Wing Just Communication, Rhythm Emotion and Last Impressions, which were all the OP, plus Endless Waltz "theme song" are probably always going to be my favorite out of the Gundam series as a whole. Though Gundam 00 OPs are starting to sneak in there, which only seems right being similar to Gundam Wing in some ways.
Running down some others, Hitomi no Tsubasa from Code Geass 3rd OP. Kirari Takaramono from Love Hina Again, GITS:SAC and GITS:SAC 2nd GIG OPs, ex Dream from X TV, Kai no Mahou from Maburaho and Tomorrow from FMP, to name a few others.

Generator Gawl Why? Because it's beyond awesome, words do not describe, no other opening can compare.
As for greatest ending...I like Kuroshitsuji's ending and...*gasp* Generator Gawl's ending.

If I only had to pick one anime, then I would pick:
Chrno Crusade
Opening: It's been a while since I watched the entire series, but I really think that Chrno Crusade had only one opening. Here's the link to the opening.
Song: Tsubasa wa Pleasure Line (Link to the whole song)
Why: The opening song feels like it's really energy-driven, and when it starts, it's like "BOOM! Show starts NOW!!!" and grabs my attention.I never get sick of hearing it. I think it's also kind of misleading, but in a good way. When you first see the opening, you don't really think the actual anime would be as "brutal" (for lack of a better word) as it can be in a lot of the episodes, especially in the ending of the series.
Ending theme: Funny enough, it's also from Chrno Crusade.

Gundam SEED Destiny. The first ending theme 'Reason' that performed by Tamaki Nami is my gateway. I love this anime because it has an epic battle scene and nice storyline. The war side is balance enough with others side in the anime
ef - a tale of melodies ("Ebullient Future") - The best thing I love about the opening is that it changes every few episodes until the final episode ending shows the opening completely in color with some changes to what is happening.
Magic Knight Rayearth ("Yuzurenai Negai") - My favorite thing about this OP is how colorful it was. It's also a nostalgic OP for me since it's one of the first series I saw back when I was still trading fansubbed VHS tapes with my anime penpals. XD
Romeo x Juliet ("Inori ~ You Raise Me Up") - I actually never watched past episode 3, but I still liked the OP and song anyways.
Revolutionary Girl Utena ("Rinbu Revolution") - I never finished watching this series either, but the OP was pretty awesome.
Pandora Hearts ("Parallel Hearts") - I tried to get into the anime. I really did, but the manga was better so I stopped watching it after awhile. I still think the OP is pretty cool though.
Jigoku Shoujo Mitsuganae ("Tsukihana") - I hated this series after watching all 3 seasons, but this was my favorite OP and song out of them all.

Well.. My favourite opening song is of course, BLEACH's Asterisk. Great performace from ORANGE RANGE and cool movie!
Kimi ga Suki da to sakebitai also good. It means 'I love you and I wanna shout it' lol
I like the opening for Full Metal Panic 2,the first op for Shippuuden and the second german op for one piece!

Any who, I'm surprised we don't have any love for Lupin the 3rd's opening. I'm not sure on the name of the song, or who preforms it but c'mon, there's just so much sax in that! Love it. Reminds me of Tank from Cowboy Bebop.

My favorite anime opening song is Pride by High and Mighty Color. It is the opening song for Gundam SeeD Destiny. I believe that is the opening for the first 10 or so episodes. Not exactly sure though.
Also the first opening song for Season 1 of FMA. Ready Steady Go by Larc En Ciel. Damn good song.

And Why? Maximum The Hormone are one of my favourite bands, and the song is probably my favourite by them. Aside from the song, the opening is crazy! I love the part when Ryuk is chasing the apple, and when L spins on his chair and eats stuff every time he faces the camera. Love it <3
If I had to choose a second, it would be Lucky Star. What an addictive song!
And as for ending, I would say the 1st Bleach ending, mainly for the song. It's a nice song, and goes well with the imagery.

One of my favorite Openings for anime would be the 4th Opening for Naruto, Fighting Dreamers.
But I'd Like A Cookie!!!
Mine would have to be 'Tank!' from Cowboy Bebop. It's kinda annoying at first, but it grows on you fast. And i also like Inuyasha's second season opening, i forget what it was called.
