I try not to use a ton of apps, especially if it's something like Facebook where I can just use the mobile site, but this is what I've got:
Dolphin Browser HD for web, way better than the stock Android browser cause it does tabs and things. Seems more stable, too.
AVG Antivirus, because smartphones aren't immune.
B&N Nook app, because I read tons of ebooks and it's nice to always have something to read with me.
Box/Drive/Dropbox for storage. Yes I have all three, I use them for different things though. Dropbox has mostly schoolwork, Drive has writing, Box media.
Gamefly app, haven't really used it yet but it's there.
Ing Direct and Mint for managing my personal finances. Nice to get a realtime update when I need it.
MyFitnessPal for tracking mainly exercise, cause it's easier to remember than jumping on the website. P Tracker because I'm a girl and it's actually fairly accurate at predicting when my cycle will start, cause I always forget to mark that.
Out of Milk for shopping lists, I may forget a list but I never forget my phone.
Netflix. I like to use it to watch stuff while I'm working out.
Everything else is stock apps that came with the phone. I wish I could remove the ones I won't ever use without having to root the phone, but alas, that is not the case.
