    Cooking with ramen: meals on a budget

    So, something I've always loved to do is experiment with ramen noodles. They're quick to fix and absorb all kinds of different flavors, so they're somewhat of a favorite when I'm a little strapped (or just craving way too many carbohydrates).

    I'd like to open up a thread for simple ramen recipes, or other such cost-effective creations.

    First, I'll share an old recipe that my previous roommate used to do all the time. We did this back when we were in high school together, and it's probably what sparked my interest in cooking with ramen. If you like Spaghetti-Os, this is brilliant. Mix one can of tomato soup as per its directions. When it boils, add the flavor packet from one package of chicken ramen, and then add noodles from two packages into the pot. When the noodles are done, transfer into two or three bowls, depending upon how much of a fatass you are and how much you like to share. Sprinkle shredded cheddar over the top. Cheesy childhood, coming right up!

    It's super tasty, but it's high in sodium. I never could eat more than a quarter of the entire product, heh.


    So here's what I did tonight.

    One package ramen. Flavor packet tossed aside. 1/2 cup vegetable stock into a small pan, heated to a boil. 1/2 tablespoon of butter dropped in the pan. Chipotle powder, lemon pepper, dill weed, and a garlic herb blend sprinkled into the pan. When everything blends, add a cup of water. When it boils again, crush your noodles and dump them all into the pan. Stir, stir, and watch the noodles soak up all kinds of flavors. It will be very thick, as the majority of the liquid will be absorbed into the noodle. When almost all of the liquid is gone, turn off the burner and keep stirring (to avoid top layer drying out). Dump into a bowl and eat with preferred utensil of choice.

    Here is a tasty snack you can make. Only uses 1 slice of bread too, so it could be relatively healthy to have regularly. You could fill with all kinds of things, so long as you use egg first, because the egg forms the base of the bread.





    EDIT: Wasn't sure if this was a cooking with RAMEN (only) on a budget thread.

    So I guess perhaps you can fill the bread with ramen noodles.

    Probably already quite known, but here's one I do: Ramen Noodle Omelet.

    What you need: Oil (quite a bit or the omelet with stick to the pan!), two eggs, Ramen noodles (chicken is best, but use whatever you want) and a bit of milk.

    Cook noodles according to package directions. Drain and set aside. Get a bowl and scramble your eggs and milk together, and then add half of the flavor packet (or all if you want the sodium bomb). Mix the noodles in the egg mixture and pour into a hot pan with your oil. Cook 'til crispy and then flip to cook other side.

    That's the basic recipe. I usually add some cheese on top, and then fold over once the other side is done well enough, and top it with ketchup and Sriracha. Yum~

    Not ramen, but one of my fav breakfasts is macaroni and tomatoes...

    You need:

    Elbow macaroni
    A big can of whole stewed tomatoes

    Bring a pot of water to a boil & add like.. 1/2 a box of macaroni.
    Only boil it for like 3 - 4 minutes and drain the noodles.

    Crush the tomatoes, with your hands, in a bowl and add to the pot.
    Put it back on the heat, lower it down to med-low, cover, and simmer until the macaroni is soft & cooked through.

    Add salt & pepper before eating.

    The cooked egg is what holds it together at the base. Is there anything else you can think of that you could cook and would also act as a base, instead of the egg?
    Id like to start doing this myself, and would be interesting to have a variety of recipe's to experiment with.

    You could also make "fideos"..

    La Moderna brand small noodles - wagon wheels, vermicelli, stars, abcs, whatever.
    Tomato Sauce
    Any leftover veggies - Corn, Celery, Onion, Carrots, etc
    Oil

    Lightly fry the noodles in oil in a skillet, stirring constantly, until they turn a lighter/opaque color

    Add water and any vegetables. You can also add leftover shredded chicken, cooked ground beef, or any other kind of meat.

    Add just enough tomato sauce to turn the soup red-ish and give it a bit of flavor. Cook/simmer until the noodles are soft.

    Top with chopped cilantro, onion, etc.

    I made a cheap ass knock off of Miso ramen one night except without the miso, none what so ever, I used vegetable stock instead it was still nice but I dare so it would not even compare to traditional miso ramen.

    Healthy cheap meal for ya'll, I call it vegetarian bolognese.

    Choose your fav pasta I used fettuccine, cook it.

    Using either condensed tomato soup or a tin of diced tomatoes(if you use the diced tomatoes you may need to add tomato paste),
    chuck it in a saucepan, add vegetables, I used celery a five bean mix, diced carrots, zuchinni, onion, garlic then slow simmer until vegetables soften. DONE then of course you spoon your mixture over the pasta and I grated Parmesan cheese on top.

    Huh. I thought I was enterprising and imaginative by adding a hard-boiled egg, carrots and celery to chicken ramen and then eating it with a spam and mustard sandwich.
    Funny. I once again eat classy nosh(have more income), but I still love spam and ramen.

    Easy Egg Drop Soup:

    Egg
    Chicken Boullion (however you spell it.. The smallest jars of it in the Mexican Aisle are only like .75 cents or so).
    Water
    Corn Starch (though I've never used it and only increases the grocery bill... I guess it's used as a thickener?)
    Chopped Green Onion

    Simply boil the water and add boullion to taste.. Enough to make chicken basic chicken broth, but I like using extra 'cuz it has a lot of sodium in it so I don't have to add more salt later. Alternatively, you can use pre-made chicken broth in a can or box, but it costs more.

    Beat a couple or 3 eggs depending on how much water you're using/people served/how eggy you want it.

    When the water starts boiling, add the egg just like you would with one of those egg drop soup packets... Slowly and stirring as you go so you don't get big lumps of boiled egg.

    Add green onions.


    Also for some reason, canned pinto beans drained, and heated up, then mixed with mayo is really good.

    I miss living in the Ghettos of Phoenix sometimes. XD
