This is all Joe and I do, is theorycraft on the best 6 jobs.
2 Black Mages (one can be replaced with some other like a Hunter)
Monk
White Mage
Knight
Time Mage
Also Joe told me each character has 2 jobs for some skill combos? Idk.
Anyone decided which jobs they're going to give everyone yet?
I'm honestly having a tough time deciding. I'm currently on the screen to pick for Vaan, and I'm hovering over Skikari. Vaan is a good all rounder but I preferred the freedom of the original game. I haven't even decided what to pick for his second job. Looked online and other people seem to be far more adventurous with their jobs than I.
You guys know what you're going to do yet?

I had a lot of trouble too haha. Going from being able to change things up on the fly to sticking to a particular skillset meant Panelo, Fran or Balthier didnt get assigned a Job until I escaped the Nalbina Dungeon. I'm not 100% sure but Fran has access to Tier 1 level spells regardless of Job? It makes sense as she's the designated mage at the start of the game.
After a lot of umming and arring Vaan is a Shikari, Balthier is a Uhlan(?) and Fran is a Time Battlemage. Not too worried about what might be the best Jobs at this point, that's something to save for the next file when I've regained all that lost knowledge on the game. Thinking of making Basch a Knight, Ashe a Red Battlemage so I can actually use Arcane magic for once. And still have no idea for Panelo... but that's always been the case. Prolly something magey.

See, I made Penelo the Uhlan.
Still haven't assigned Balthier or Fran a job yet, and I'm in the Nalbian Dungeon. Ashe is going to be my Red Mage.
Wish the choice was available for the old Licence Grid... I switched it up all the time.
Yeah part of me wishes you could change to the old system and the other is saying to embrace the new one and the challenge that comes with it. Loving the game so far! All those fond memories of things like worrying about what treasure chests stop you getting the Zodiac Spear and the satisfaction of outfitting your party with new gear when you sell a ton of loot have returned.
From what I've seen so far the physical Jobs are just weapon and armor combinations with Job specific technicks? The magey type ones seem to be the kinds that need more thought put into them when deciding who should be what.

Fran is the worst character for stats in the game, just an FYI.

I do not own the console on which this game can be run.
"I find this all to be highly inappropriate."
an important change in this version is that all bosses and enemies are susceptible to debuffs. This is huge. This means if you are not sure what job to pick, pick a foebreaker. A foebreaker will have access to all debuffs and can be used to constantly weaken whatever enemy you're fighting, including bosses and superbosses. This is especially important for Yiazmat, should you care to defeat him in 2 hours as opposed to 4.
I like using Fran because she has a great attack animation (hits faster than most other characters) and can be a great dedicated Foebreaker as she has the highest VIT of any character and serves as a great debuffer/tank.
Take my advice, and make use of that job as its going to serve you very well from begining to end.
Is there some new version of FFXII that I'm unaware of?
It would appear so. There are 3 versions in total.
The original Final Fantasy XII
The Final Fantasy XII INTERNATIONAL ; Zodiac Job System
and finally, Final Fantasy XII; The Zodiac Age.
Obviously FF12 vanilla is basic
FF12 International ZJS or IZJS is a version released in japan only which has a specific job system for characters, once locked in, they will only have access to that specific license board and subsequent equipment/magik/techs.
FF12 The Zodiac Age is a remaster of the japanese IZJS, but instead of being able to only pick 1 job per character, now you can select 2.
The other huge difference in both zodiac versions is that all enemies and bosses are susceptible to debuffs. This changes the way the game is played considerably, as a debuffer is now almost essential for any strong team.

I did a weird pick for mine but its seems to be going well for now
Vaan - Knight/Bushi
Balthier - Machinist/White Mage
Fran - Archer/Uhlan
Basch - Bushi/Monk
Ashe - Black Mage/Red mage
Penelo - White Mage/Timed mage
I started with Vaan/Basch/Ashe as my main team and the others as off side, lvled up my offside team and enjoyed the part having archer in the group.
I swapped my team around a bit its now Fran/Basch/Ashe at the moment. Basch destroys everything while I have Fran off side dispelling and urgent heals below 30% while I have ashe main healing with cura below 50% at this time. I am lvl 55 with my main team atm with off side team about 48.
It's cool seeing everyone's choices in this game. I was a bit worried about how restrictive the game might have been at first with forcing you into specific Jobs, but it's surprising how much variety you can have once you unlock the second License Board.
Just finished up biz in Jahara, my main party looks like this:
Basch: Knight/Foebreaker
Vaan: Shikari/Time Battlemage
Ashe: Time Battlemage/White Mage
Took Rowan's advice and added a Foebreaker to the party. Went with Basch because he'll be leading the Boss battles, plus gets extra Attack and Shield bonuses. Vaan's going to be the damage leader of the team once I get Ninja Swords and eventually Genji Gloves. Wont have access to Hastega otherwise so he's a Time Mage. Also gives access to Heavy Armour should I decide to switch. I never used offensive spells higher then Fira, Thundara and Blizzara in the past so made Ashe a White Mage to have access to Bravery, Faith and Curaga.
Backup party is:
Balthier: Uhlan/Black Mage
Panelo: Monk/White Mage
Fran: Time Battlemage/something
Was originally keeping these guys levels equal with the main party but gave up not too long ago. Now that Vaan can use Crossbows and Ashe has Fira (Dark was really strong at the start of that game, now not so much) I don't really need to worry about having guys who can hit fliers. Might aim to keep them 5 levels lower or something should I get wiped out by a boss.

I looked at the job list to see all the job classes the game had and I'm a bit disappointed, if I had the game, I would have happily had a full party of bard/shikari job classes just to make things interesting. Maybe I can make up for that with one of the other job classes, we'll see.

The game is going really well. I told myself I wouldn't abuse the speed up feature, but its too damn tempting! i find myself using it a lot when fighting random mobs. I'm upto traversing the Mosphoran Highwaste, but I think I should do a few more hunts before I continue to progress. I can comfortably do rank III hunts, so I might just finish up with the ones I have available before continuing on. Im looking forward to hitting the Phon Coast (one of my favourite places in the game).
Fran is best used for Potions and maybe Haste.
