I've finished Battletoads in Battlemaniacs (SNES) multiple times on both single player n (mostly) co-op altho sometimes Id get stuck on a couple stages for a lil longer than I liked no matter how hard I focused.
Zombies ate my Neighbour's kicks my ass every time I've gone back in an attempt to finish it. You can skip levels by using the passwords given to u but I find them useless since u need to build ur inventory as u complete each level (furthest level Ive reached is 28). I always start from level 1 anyways its just a really fun game.
In Bloodborne I found Amygdala n Ebriates the most challenging bc the design of those assholes kept making me gag#trypophobic. The AI is the best Ive seen in a game taking on the small fry was too risky at times so I felt I had no choice bt to run past em esp when all my focus was on defeating a boss (optional or not). I had a few one-offs in Bloodborne tho with Micolash, Vicar Amelia, Bloodstarved beast, Shadow of Yharnam n surprisingly most of the chalice dungeon bosses incl that pretty Watchdog.
If it werent for Einhander's (PS1) godly ost to carry me I wouldnt have delved so far into that game. The epic music was so in sync with the chaos. It kicks in where you're in the middle of dodging a million projectiles while dishing out a million of bullets from your gunpod. They absolutely knew how to compose a boss battle song just as lengthy as to fit the boss battle patterns.
My 2 fave hack n slash games DMC3 and Ninja Gaiden 2 (Xbox360) were enjoyably difficult. Moreso Ninja Gaiden 2 bc I found the gameplay 10x better. Its faster n more fluid n I like all the gore.
