The characters in Ehrgeiz were for the better part just unlockable fighters, most having both melee and ranged attacks such as Sephirtoh being able to throw meteors around. In the Itadaki Street games, the characters were akin to boardgame pieces. In the Kingdom Hearts games, most characters just aided the story in some way. Squall as Leon and Yuffie and Aerith aided Sora and did their part against the heartless, Cid had a store in the original Kingdom Hearts for gummies, Selphie, Tidus and Wakka shaped the character's base abilities and provided training in the first Kingdom Hearts, and some made later cameos such as Selphie in her chat with Kairi in Kingdom hearts 2.

Q. Name three characters from outside of Final Fantasy games that have been referenced within them other than Biggs and Wedge.

EDIT: As it's been some time now, here's the answer.

A. Acceptable answers would include Erdrick (Dragon Quest) and Link from Legend of Zelda whose names appeared on a gravestone in different versions of FFI, Torres and Wayne of Parasite Eve are referenced in FFIX, Nanaki was said to be an anagram of Anakin of Star Wars fame, Tierce, Kyneugh, and Kanos in Crisis Core were minor Star Wars characters, Piet and Nida from FFVIII were Star Wars characters, in FFIX Necron quotes Yoda (again from Star Wars), in final fantasy tactics Luke Skywalker and Indiana Jones are referenced in the tutorial (Luke and Indy) and there's a ton more too.
