I can't sleep. My hips and back are murdering me right now. Jay had to get up at 3:30 this morning & be @ work by 4:30.. Something about an 18 mile trek with all their gear that's gotta be done by 7:30.
He made me help him get his bullet proof vest re-arranged, but it was kind of a fail. Those effing snaps are so hard to do. He just needed his mini water bottle thingy moved and the holders for the AK-47 magazines taken off. First I didn't put the water bottle case on right (he was like "Weave the straps!", but I still didnt really understand, so he had to take it off and re-do it).
..... Then he asked me to refill said mini water bottle. I looked at him like he was retarded, and yes, I really asked him - "How the hell am I supposed to refill it when it's already attached to the vest!?"
Without a word, he simply un-velcroed (or whatever) the top and pulled the damn thing out.
Clearly, I could never be in the Army. They'd probably shoot me on purpose and say it was an accident or the Taliban got me or something. lulz. I think I laughed at myself for like 30 minutes over it though.
Buuuut. Dinner last night, I made steak Tortas. With "Bolillo" bread (sold in the bakery @ Wal Mart). Sadly, there's no Panaderia (Mexican Bakery) around here, so I couldn't get anything bigger.
I'd already made this spicy thick salsa with toasted dried japanese chili pods, so I squeezed some lime-flavored mayo into a bowl, squeezed in a bit more lime, and stirred some of the salsa into it.
Then I grilled these rather large pieces of skirt steak that I'd slathered with a melted compound butter (seasoned with McCormick's Fiesta Lime /Citrus whatever seasoning) with chunks of onion and a jalepeno. Medium rare doneness of course.
Inside, I sauteed up what was left of our chorizo, made a couple of fried eggs - over medium, and then made bacon.
Heated up what was left of the black beans I'd made the other day & sliced up an avocado. Also used crumbled Queso Fresco
Halved the rolls and toasted them lightly on the girll.
On -His- sammich. I loaded that sumbich up.. Slathered the spicy mayo on both sides of the bread, then on the top 1/2, a small spoonful of the black beans, avocado slices, & the queso fresco.
On the bottom 1/2 of the sammich - thinly sliced pieces of the steak followed by the chorizo, then 1 of the eggs, then the bacon.
Carefully put the 2 together and smush gently so it's not all gonna fall apart.
He -lurved- it. lol He eats a lot and said that was really filling. I didn't put as much on mine and I still couldn't move I was so full. hehe.
I was gonna make homemade french fries but -that- is a process and by the time I got the sandwiches done, I'd lost momentum to keep going. ha.
