Recipe Time!! I dont measure, FYI...
Mexican Shrimp Cocktail
(Coktel de Camarones)
- Shrimp (uncooked, shell on, any size)
- Cucumber
- Tomatoes
- Avocado
- Onion
- Garlic
- Jalepeno
- Cilantro
- Limes
- Clamato brand tomato juice cocktail
-Tostadas, for serving
- Grill or boil shrimp. Peel when done & put in a large serving bowl.
- Chop cukes, tomatoes, onion, cilantro, & avocado & add to shrimp.
- Finely mince garlic and jalepeno & throw in there
- Pour just enough Clamato over Shrimp mix to cover. Squeeze in lime juice & toss gently with large spoons to combine flavors.
To Serve: Ladle the cocktail into individual bowls on plates with tostadas on the side.
*Jalepenos may be seeded before adding to cocktail.
* Garlic & onion may be lightly sauteed in butter or olive oil for those who dont like raw.
Black Beans:
(I use canned mostly cuz I'm too lazy to use dried)
Simply sautee onion, garlic, jalepeno, & mexican chorizo in a pot until the chorizo is mostly cooked. Pour beans into pot (dont drain or rinse) & simmer on low for at least 30 min. Add salt & pepper to taste.
